Scale
Wet Ingredients
- 1/4 cup unsalted butter
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 1/2 cups pitted Medjool dates, chopped
- 1 cup walnuts, chopped
- 1 cup crushed digestive biscuits or graham crackers
- 1/2 cup shredded coconut
- Pinch of salt
- Optional: extra coconut or crushed nuts for topping
Instructions
- Prepare the Pan: Line an 8×8-inch pan with parchment paper to prevent sticking and allow easy removal of the slice once set.
- Melt Butter and Sweetener: In a medium saucepan over low heat, melt the unsalted butter together with honey or maple syrup, stirring until smooth and combined.
- Cook Dates: Add the chopped Medjool dates to the melted butter mixture and cook for 3–4 minutes until the mixture thickens, becomes sticky, and the dates soften slightly.
- Add Flavorings: Remove the saucepan from heat and stir in vanilla extract and a pinch of salt to enhance the flavors.
- Combine Dry Ingredients: In a large mixing bowl, combine the crushed digestive biscuits, chopped walnuts, and shredded coconut.
- Mix Wet and Dry: Pour the warm date mixture over the dry ingredients. Mix thoroughly to ensure all dry ingredients are evenly coated with the sticky date mixture.
- Press Mixture: Transfer the combined mixture into the prepared pan. Use the back of a spoon or your hands to press it firmly and evenly into the pan, smoothing the surface.
- Add Topping: Sprinkle extra shredded coconut or crushed nuts on top, if desired, for added texture and visual appeal.
- Chill: Refrigerate the pan for at least 2 hours or until the slice is firm enough to cut.
- Serve: Remove from the fridge, slice into 16 bars or squares, and serve chilled or at room temperature.
Notes
- You can replace walnuts with pecans or almonds to suit your preference.
