Instructions

  1. Prepare the Pan: Line an 8×8-inch pan with parchment paper to prevent sticking and allow easy removal of the slice once set.
  2. Melt Butter and Sweetener: In a medium saucepan over low heat, melt the unsalted butter together with honey or maple syrup, stirring until smooth and combined.
  3. Cook Dates: Add the chopped Medjool dates to the melted butter mixture and cook for 3–4 minutes until the mixture thickens, becomes sticky, and the dates soften slightly.
  4. Add Flavorings: Remove the saucepan from heat and stir in vanilla extract and a pinch of salt to enhance the flavors.
  5. Combine Dry Ingredients: In a large mixing bowl, combine the crushed digestive biscuits, chopped walnuts, and shredded coconut.
  6. Mix Wet and Dry: Pour the warm date mixture over the dry ingredients. Mix thoroughly to ensure all dry ingredients are evenly coated with the sticky date mixture.
  7. Press Mixture: Transfer the combined mixture into the prepared pan. Use the back of a spoon or your hands to press it firmly and evenly into the pan, smoothing the surface.
