- 2 cups semi‑sweet chocolate chips
- 2 tablespoons coconut oil or vegetable shortening

- Mix Peanut Butter and Butter: Beat together the creamy peanut butter, softened butter, and vanilla extract (if using) until the mixture is smooth and well combined.
- Add Powdered Sugar: Gradually stir in the powdered sugar until the mixture becomes fully combined and dough-like in texture.
- Incorporate Rice Krispies: Fold in the Rice Krispies cereal gently until it is evenly distributed throughout the dough.
- Form Balls: Scoop approximately 1-inch balls from the mixture and place them onto a parchment-lined baking sheet for easy handling.
- Freeze the Balls: Place the baking sheet in the freezer and allow the peanut butter balls to firm up for about 15 minutes.
- Melt Chocolate Coating: While the balls firm up, melt the semi-sweet chocolate chips with the coconut oil in the microwave, stirring every 15 seconds until the chocolate is smooth and fully melted.
- Dip Peanut Butter Balls: Dip the chilled peanut butter balls into the melted chocolate, allowing any excess chocolate to drip off, then place them back onto the parchment-lined sheet.
- Refrigerate to Set: Refrigerate the chocolate-coated balls for at least 30 minutes until the chocolate has completely set. Serve chilled or at room temperature for the best flavor and texture.
