- 1 cup Medjool dates, pitted
- 1 cup raw walnuts
- 1/2 cup raw almonds
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons chia seeds
- 2 tablespoons flaxseed meal
- 2 tablespoons hemp hearts
- 2 tablespoons coconut oil, melted
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon sea salt
- 1/4 cup dark chocolate chips, optional
- 2 tablespoons shredded coconut, for topping, optional
Instructions
- Grind Nuts: In a food processor, pulse walnuts and almonds until finely ground.
- Mix Ingredients: Add dates, cocoa powder, chia seeds, flaxseed meal, hemp hearts, coconut oil, vanilla extract, and sea salt. Process until mixture forms a sticky dough.
- Add Chocolate: If using, pulse in chocolate chips until just combined.
- Press into Pan: Line a baking pan with parchment paper and press mixture firmly into the pan. Sprinkle with shredded coconut if desired.
- Chill and Serve: Refrigerate for at least 1 hour until firm. Slice into squares and serve chilled or at room temperature.
