- 2 large yellow onions, thinly sliced
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 ounces pasta (such as penne or fusilli)
- 4 cups low-sodium beef broth (or vegetable broth for vegetarian)
- 1/2 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 1/2 cups shredded Gruyère cheese
- 1/4 cup grated Parmesan cheese

Instructions
- Caramelize the Onions: In a large deep skillet or Dutch oven, melt the butter with olive oil over medium heat. Add the sliced onions and sugar, and cook for 20–25 minutes until deeply caramelized.
- Add Flavor: Stir in garlic, thyme, salt, and pepper, and cook for 1 more minute.
- Cook the Pasta: Add pasta, broth, cream, and Worcestershire sauce. Bring to a boil, then simmer covered for 10–12 minutes until pasta is tender.
- Melt the Cheeses: Remove from heat and stir in Gruyère and Parmesan cheeses until melted and creamy.
- Finish and Serve: Let pasta sit to thicken, then garnish with parsley before serving.
