Description

This One Pot French Onion Pasta is a deliciously creamy and comforting dish that brings together the rich flavors of caramelized onions, Gruyère and Parmesan cheeses, and a touch of cream. Perfect for a cozy weeknight dinner.

Ingredients

Scale

For the Pasta:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces pasta (such as penne or fusilli)
  • 4 cups low-sodium beef broth (or vegetable broth for vegetarian)
  • 1/2 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 cups shredded Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Caramelize the Onions: In a large deep skillet or Dutch oven, melt the butter with olive oil over medium heat. Add the sliced onions and sugar, and cook for 20–25 minutes until deeply caramelized.
  2. Add Flavor: Stir in garlic, thyme, salt, and pepper, and cook for 1 more minute.
  3. Cook the Pasta: Add pasta, broth, cream, and Worcestershire sauce. Bring to a boil, then simmer covered for 10–12 minutes until pasta is tender.
  4. Melt the Cheeses: Remove from heat and stir in Gruyère and Parmesan cheeses until melted and creamy.
  5. Finish and Serve: Let pasta sit to thicken, then garnish with parsley before serving.

Notes

  • For extra richness, top with more shredded cheese and broil until bubbly.
  • Use vegetarian Worcestershire sauce and veggie broth for a vegetarian option.
  • French fried onions make a crunchy topping.
