For the glaze:

  • 1 cup powdered sugar
  • 23 tablespoons fresh orange juice
  • 1/2 teaspoon orange zest

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then add ricotta, orange zest, orange juice, and vanilla extract, mixing until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until just combined. Fold in the dried cranberries.
  4. Bake: Drop rounded tablespoons of dough onto the baking sheet, spacing about 2 inches apart. Bake for 12–14 minutes, or until the edges are set and the tops look slightly puffed.
  5. Cool and glaze: Let cool on the pan for 5 minutes, then transfer to a wire rack. To make the glaze, whisk together powdered sugar, orange juice, and zest until smooth. Drizzle over completely cooled cookies. Let the glaze set before serving.
