Chicken:
1 whole chicken (3.5 to 4 pounds, backbone removed and flattened)
- 3 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 tablespoon fresh rosemary (chopped)
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 2 sprigs fresh rosemary (for roasting)
- 1 lemon (sliced)
- heavy cast iron skillet or bricks wrapped in foil (for pressing)
Instructions
- Preheat the Oven: Preheat oven to 425°F.
- Prepare the Seasoning: Combine olive oil, garlic, chopped rosemary, lemon zest, lemon juice, salt, pepper, and smoked paprika in a bowl.
- Season the Chicken: Pat the chicken dry and rub with the seasoning mixture.
- Roast the Chicken: Place chicken skin-side down in a skillet, press with a weight, roast for 25 minutes, then flip and roast for another 20-25 minutes with lemon slices and rosemary.
- Rest and Serve: Let the chicken rest for 10 minutes before carving.
