- Prepare the Filling: In a large mixing bowl, combine the peeled and sliced peaches with granulated sugar, brown sugar, lemon juice, vanilla extract, ground cinnamon, nutmeg if using, and cornstarch. Mix well to coat the fruit evenly, then spread this peach mixture evenly into the prepared baking dish.
- Make the Topping: In a separate medium-sized bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Gradually stir in the whole milk and melted butter until you achieve a smooth batter. Drop spoonfuls of this batter evenly over the peach filling, leaving some portions of the fruit exposed to allow bubbling.
