Ingredients

Scale

Ingredients:

  • 1 cup granulated sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • 1 cup roasted salted peanuts
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch of salt (optional if peanuts are unsalted)

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper or lightly grease it and set aside.
  2. Cook Sugar Mixture: In a medium saucepan, combine sugar, corn syrup, and water over medium heat. Stir constantly until the sugar dissolves, then attach a candy thermometer to the side of the pan. Cook until it reaches 300°F (hard crack stage).
  3. Add Peanuts and Flavorings: Stir in peanuts, butter, vanilla, and salt if using. Remove from heat and quickly mix in baking soda.
  4. Spread and Cool: Pour the hot brittle onto the prepared sheet, spread thinly, and let it cool completely. Break into pieces and serve.

Notes

  • Use a candy thermometer for best results.
