Cookie Bars:
- 1/2 cup unsalted butter (softened)
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven: Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Cream butter and sugars: In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
- Add egg and vanilla: Add the egg and vanilla, mixing until fully incorporated.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- Mix wet and dry: Gradually stir the dry ingredients into the wet mixture until combined. Fold in the chocolate chips.
- Bake: Spread the dough evenly into the prepared pan and smooth the top. Bake for 22–26 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean.
- Cool and cut: Cool completely in the pan before lifting out and cutting into squares.
Notes
- For softer bars, slightly underbake and let them set as they cool.
- You can substitute milk chocolate chips or add chopped nuts if desired.
