Description

Pasta:

  • 12 ounces penne pasta

Sauce:

  • 2 tablespoons olive oil
  • 4 garlic cloves (thinly sliced)
  • 1/2 to 1 teaspoon red pepper flakes (to taste)
  • 1 can (28 oz) crushed tomatoes
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
  • 1/4 cup chopped fresh parsley or basil
  • Grated Pecorino Romano or Parmesan for serving (optional)

Instructions

  1. Cook the Pasta: Boil salted water and cook penne until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. Make the Sauce: Heat olive oil in a skillet, sauté garlic and red pepper flakes. Add crushed tomatoes, salt, and pepper. Simmer for 10-15 minutes.
  3. Combine: Add drained pasta and a splash of reserved water to the skillet. Toss well. Stir in fresh herbs.
  4. Serve: Top with grated cheese if desired and serve hot.
