Ingredients
Scale
Bell Peppers
- 1 large green bell pepper, sliced and seeds removed
- 1 large yellow bell pepper, sliced and seeds removed
- 1 large red bell pepper, sliced and seeds removed
Vegetable Mix
- 2 tablespoons salted butter
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 8 ounces cremini mushrooms, thinly sliced
Meat and Cheese
- 1 1/2 pounds deli-style roast beef, thinly sliced
- 6 slices provolone cheese
- 1 cup shredded mozzarella cheese
Instructions
- Prepare Peppers: Slice the green, yellow, and red bell peppers into strips, removing all seeds and ribs to ensure tenderness and avoid bitterness.
- Sauté Vegetables: In a large skillet, melt the butter over medium heat. Add the thinly sliced onions and minced garlic, cooking until they become fragrant and translucent, about 2-3 minutes. Then add the sliced mushrooms and bell peppers. Continue to sauté until all the vegetables are tender but still maintain a slight bite, approximately 5-7 minutes.
- Add Beef: Stir in the thinly sliced roast beef to the cooked vegetables in the skillet. Mix well to combine and season lightly if desired.
- Assemble Casserole: Transfer the beef and vegetable mixture into a casserole dish. Layer the provolone slices evenly over the top, then sprinkle the shredded mozzarella cheese over everything to ensure a melty, cheesy crust.
- Bake: Preheat your oven to 350°F (175°C). Place the casserole in the oven and bake for 15 minutes until the cheese has melted thoroughly.
- Broil: After baking, switch the oven to broil and cook for an additional 2-3 minutes, or until the cheese is bubbly and lightly browned. Watch carefully to avoid burning.
Notes
- Use thinly sliced deli roast beef for best texture and flavor; leftover roast beef also works well.
- Adjust the amount of cheese to your preference; more cheese adds richness but also calories.
- For a spicier kick, add sliced jalapeños or a dash of hot sauce to the vegetable sauté.
- Serve with a side of toasted bread or a fresh green salad for a complete meal.
- Make sure to broil at the end for that signature browned and bubbly cheese topping.
