Instructions
- In a mixing bowl, combine: the drained crushed pineapple, 1 1/4 cups shredded coconut, graham cracker crumbs, softened cream cheese, honey, vanilla extract, and a pinch of salt. Mix until a thick dough forms.
- Chill the mixture: in the refrigerator for 30 minutes to make it easier to handle.
- Once chilled, scoop and roll: the mixture into 1-inch balls. Roll each ball in the remaining shredded coconut to coat.
- Place the balls: on a parchment-lined tray and refrigerate for at least 1 hour to set.
- Serve chilled or store: in an airtight container in the refrigerator for up to 5 days.
