Description

These Pineapple Coconut No-Bake Balls are the perfect tropical treat for any occasion. With a sweet and tangy flavor, these easy-to-make balls are a delightful dessert or snack that will have everyone coming back for more.

Ingredients

Scale

Ingredients:

  • 1 cup crushed pineapple, well drained
  • 2 cups sweetened shredded coconut, divided
  • 1 1/2 cups graham cracker crumbs
  • 4 ounces cream cheese, softened
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. In a mixing bowl, combine: the drained crushed pineapple, 1 1/4 cups shredded coconut, graham cracker crumbs, softened cream cheese, honey, vanilla extract, and a pinch of salt. Mix until a thick dough forms.
  2. Chill the mixture: in the refrigerator for 30 minutes to make it easier to handle.
  3. Once chilled, scoop and roll: the mixture into 1-inch balls. Roll each ball in the remaining shredded coconut to coat.
  4. Place the balls: on a parchment-lined tray and refrigerate for at least 1 hour to set.
  5. Serve chilled or store: in an airtight container in the refrigerator for up to 5 days.

Notes

  • Make sure the pineapple is well drained to avoid excess moisture.
  • You can use unsweetened coconut for a less sweet version or add a bit of lime zest for a tropical twist.
  • These also freeze well for longer storage.
