Cheese Crisps:

Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the cheese mixture: In a medium bowl, combine cheddar, Monterey Jack, garlic powder, smoked paprika, and black pepper.
- Form and bake the crisps: Place tablespoon-sized mounds of the cheese mixture onto the prepared baking sheet, spacing them 2 inches apart. Flatten slightly, then top each with a jalapeño slice. Bake for 7 to 9 minutes, or until the cheese is melted and bubbly with golden, crisp edges.
- Cool and garnish: Allow the crisps to cool on the baking sheet for 5 minutes to firm up before transferring to a wire rack. Garnish with fresh cilantro or chives if desired and serve.

- For extra kick, use pepper jack cheese instead of Monterey Jack.
