For the bars:
- 1 cup canned pumpkin purée
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 4 large eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder

- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
For the cream cheese frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
- Mix wet ingredients: In a large bowl, whisk together pumpkin purée, sugar, oil, and eggs until smooth.
- Combine dry ingredients: In another bowl, mix flour, baking powder, cinnamon, baking soda, salt, and nutmeg.
- Blend wet and dry mixes: Gradually add dry ingredients to the wet mixture until just combined. Pour batter into the pan.
- Bake: Bake for 25–30 minutes until a toothpick inserted in the center comes out clean. Cool completely.
- Make frosting: Beat cream cheese and butter until fluffy. Add vanilla and powdered sugar, beat until creamy.
- Frost bars: Spread frosting over cooled bars. Cut into squares and serve.
Notes
- Bars can be made a day ahead and stored in the fridge.
- For added texture, fold in 1/2 cup chopped walnuts or pecans into the batter before baking.
