- 2 green onions (sliced)

Instructions
- Heat the olive oil: In a large pot over medium heat, sauté the onion until softened.
- Add aromatics and curry paste: Stir in the garlic, ginger, and red curry paste; cook until fragrant.
- Add liquids and seasonings: Pour in the broth and coconut milk, add fish sauce, soy sauce, and red pepper flakes; bring to a boil.
- Cook the shrimp: Add shrimp and mushrooms, simmer until shrimp are cooked.
- Finish the soup: Stir in spinach, green onions, and lime juice; adjust seasoning with salt.
