- 2 tablespoons oil for pan-frying
- 6 slider buns
- 3 tablespoons mayonnaise or hung curd
- 1 tablespoon mint chutney
- Sliced onion and tomato for layering
- Butter for toasting buns
Instructions
- Prepare the Rajma Mixture: In a large bowl, combine the mashed rajma and mashed potatoes with finely chopped onion, cilantro, green chili (if using), ginger-garlic paste, garam masala, cumin powder, red chili powder, turmeric, breadcrumbs, and salt. Mix thoroughly until the mixture binds well to form a dough-like consistency suitable for shaping into patties.
- Form and Coat Patties: Divide the mixture into 6 equal portions and shape each into a small, round patty. Lightly coat each patty with additional breadcrumbs to ensure a crispy exterior when fried.
- Pan-Fry the Patties: Heat oil in a non-stick pan over medium heat. Carefully place the patties in the pan and shallow-fry them for about 3 to 4 minutes on each side, or until they develop a golden-brown and crisp crust. Remove and drain on paper towels to remove excess oil.
- Make the Chutney Mayo Spread: In a small bowl, mix the mayonnaise or hung curd with mint chutney until well combined. This spread adds a refreshing flavor and moisture to the sliders.
- Toast the Slider Buns: Lightly butter each slider bun and toast them in a pan or on a griddle until golden and slightly crisp.
- Assemble the Sliders: Spread a generous amount of the chutney mayo on each toasted bun base. Place a rajma kebab patty on top, then add sliced onions and tomato slices as desired. Cover with the top half of the bun and serve warm for the best taste experience.
