Description

These Rice Krispie Chocolate Chip Cookies are a delightful twist on the classic chocolate chip cookie. With the addition of crunchy Rice Krispies cereal, these cookies are crispy on the outside, chewy on the inside, and packed with chocolatey goodness.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups Rice Krispies cereal
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Cream butter and sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in eggs one at a time, then stir in the vanilla.
  4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Combine: Gently fold in the Rice Krispies and chocolate chips.
  6. Bake: Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet and bake for 10–12 minutes, until lightly golden.
  7. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For chewier cookies, slightly underbake and allow to finish setting on the baking sheet.
  • You can also add chopped nuts or use white chocolate chips for variation.
