Ingredients
Scale
Main Ingredients
- 4 cups Rice Krispies cereal
- 1/4 cup unsalted butter
- 1/2 cup golden syrup (or light corn syrup)
- 1 cup milk chocolate chips
- 1/2 cup dark chocolate chips
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Toppings and Decoration
- 1/3 cup white chocolate (for topping)
- Red and green mini M&M’s or chopped red and green candied cherries (for decoration)
Instructions
- Melt Butter and Chocolates: In a large saucepan over low heat, melt the butter, then stir in the golden syrup, milk chocolate chips, and dark chocolate chips until the mixture is smooth and fully combined.
- Add Flavorings: Stir in the vanilla extract and salt thoroughly to enhance the flavor, then remove the saucepan from heat.
- Combine with Cereal: Gently fold in the Rice Krispies cereal, ensuring each piece is completely coated with the chocolate mixture.
- Shape the Puddings: Allow the mixture to cool slightly so it’s easier to handle. Using clean hands or a scoop, form the mixture into small, round pudding-shaped balls and place them on a parchment-lined tray.
- Chill: Refrigerate the shaped puddings for about 20 minutes or until firm to hold their shape.
- Decorate: Melt the white chocolate separately and spoon a small amount over each pudding to simulate custard topping. Decorate with red and green mini M&M’s or chopped candied cherries to mimic holly berries and leaves.
- Set: Return the decorated puddings to the refrigerator until the white chocolate sets and the decorations are firm.
Notes
- For a more traditional Rice Krispie treat texture, you can substitute golden syrup with marshmallows.
- Store these Christmas puddings in an airtight container to keep them fresh for up to one week.
- Ensure the mixture isn’t too hot before shaping to avoid burns and to maintain the shape better.
- Use parchment paper or a silicone mat to prevent sticking when chilling.
