Instructions
- Prepare Peanut Butter Mixture: In a large mixing bowl, combine peanut butter, softened butter, and vanilla extract until smooth. Gradually mix in powdered sugar until fully incorporated.
- Combine with Rice Krispies: Gently fold in Rice Krispies cereal, being careful not to crush them.
- Form Balls: Using a small cookie scoop or your hands, form the mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Chill: Refrigerate the balls for at least 30 minutes to firm up.
- Melt Chocolate: In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring between each, until smooth.
- Coat Balls: Dip each ball into the melted chocolate, allowing excess to drip off, and return to the baking sheet.
- Set Chocolate: Refrigerate again for 15–20 minutes or until the chocolate is set. Serve chilled or at room temperature.
