Pie Crust:

  • 1 9-inch unbaked pie crust

Filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 3 large eggs
  • 1 cup half-and-half
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat Oven: Preheat oven to 375°F. Place pie crust in a 9-inch pie dish and set aside.
  2. Saute Onion and Spinach: In a skillet, cook onion in olive oil until softened. Add spinach and cook until wilted. Set aside to cool slightly.
  3. Prepare Filling: In a bowl, whisk ricotta, Parmesan, mozzarella, eggs, half-and-half, salt, pepper, and nutmeg. Stir in spinach-onion mixture.
