Potatoes:
- 2 pounds russet or Yukon gold potatoes, peeled and cut into chunks
Roasted Garlic:
- 1 head garlic
- 1 tablespoon olive oil
Mashed Potatoes:
- 1/2 cup butter, softened
- 1/2 cup sour cream
- 1/2 cup whole milk or heavy cream, warmed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Chopped chives or parsley for garnish (optional)
Instructions
- Roast the Garlic: Preheat the oven to 400°F. Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden. Squeeze out the roasted garlic and set aside.
- Cook the Potatoes: Boil the potatoes until tender, then drain. Mash the potatoes and mix in the roasted garlic, butter, sour cream, warm milk or cream, salt, and pepper until smooth.
- Serve: Adjust seasoning to taste and garnish with chives or parsley. Serve warm.
Notes
- You can prepare the roasted garlic in advance and refrigerate for up to 3 days.
- For extra smooth potatoes, use a potato ricer before adding other ingredients.
