Main:
- 1 medium head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 1/2 tablespoons harissa paste
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- juice of 1/2 lemon
Garnish:
- 2 tablespoons chopped fresh parsley
Optional:
- 1 tablespoon tahini or yogurt for drizzling
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C).
- Prepare the cauliflower: In a large mixing bowl, whisk together olive oil, harissa paste, cumin, smoked paprika, salt, pepper, and lemon juice. Add the cauliflower florets and toss to coat evenly.
- Roast the cauliflower: Spread the cauliflower in a single layer on a parchment-lined baking sheet. Roast for 25–30 minutes, turning once halfway through, until the edges are crispy and golden brown.
- Finish and serve: Remove from the oven, sprinkle with chopped parsley, and drizzle with tahini or yogurt if desired. Serve warm.
