  • 1 small grated carrot
  • 1 small grated zucchini
  • 1/4 cup sliced fresh chives
  • 1 cup buttermilk
  • 1 large whisked egg

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C) and prepare a standard muffin tin by greasing it or lining it with paper muffin liners to prevent sticking.
  2. Combine dry ingredients: In a large mixing bowl, whisk together the self-rising flour, salt, black pepper, granulated garlic, granulated onion, and paprika until evenly combined.
  3. Add wet ingredients and vegetables: To the dry mixture, add the grated cheddar cheese, grated carrot, grated zucchini, fresh sliced chives, buttermilk, and the whisked egg. Stir gently until just combined to avoid overmixing which could toughen the muffins.
  4. Divide batter: Evenly distribute the muffin batter among the prepared muffin cups, filling each about three-fourths full to allow room for the sausage topping.
  5. Add sausage: Divide the Italian sausage meat into six equal portions. Roll each portion into a smooth ball and place one sausage ball on top of the batter in each muffin cup, gently pressing it slightly into the batter.
  6. Bake until golden brown: Place the muffin tin in the preheated oven and bake for about 20 minutes or until the muffins are golden brown on top and a toothpick inserted into the batter portion of the muffin comes out clean.
