Ingredients
Scale
Cheeses
- 1 block White Cheddar Cheese (Can substitute with Monterey Jack or smoked cheddar)
- 1 block Cream Cheese (Use a block form for easier slicing)
Marinade
- 1 cup Roasted Sweet Red Peppers (Fresh bell peppers can be used if roasting isn’t an option)
- 1/2 cup Olive Oil (Choose high-quality extra virgin for the best flavor)
- 1/4 cup White Wine Vinegar (Apple cider vinegar can be used if needed)
- 1/4 cup Balsamic Vinegar (Red wine vinegar is a suitable substitute)
- 3 stalks Green Onions (Chives could be used as a milder option)
- 1/4 cup Fresh Parsley (Fresh is preferred for a brighter taste)
- 1/4 cup Fresh Basil (Fresh is preferred for a brighter taste)
- 1 tablespoon Sugar (Can reduce or omit based on personal taste)
- 2 cloves Garlic (Fresh garlic is ideal, but powdered garlic can be used)
- Salt to taste (Adjust to taste)
- Pepper to taste (Adjust to taste)
Instructions
- Slice the Cheeses: Begin by slicing each block of white cheddar into twenty 1/4-inch slices and each block of cream cheese into eighteen slices to prepare for layering.
- Layer the Cheese Stacks: Form four stacks, each approximately 6 inches long, by layering 9 cream cheese slices between 10 cheddar slices, creating alternating layers for texture and flavor.
- Prepare the Marinade: In a mixing bowl, combine the roasted sweet red peppers, olive oil, white wine vinegar, balsamic vinegar, chopped green onions, fresh parsley, fresh basil, sugar, minced garlic, salt, and pepper. Stir the mixture thoroughly until well blended.
- Marinate the Cheese: Pour the prepared marinade evenly over the cheese stacks, ensuring all sides are coated. Cover the dish tightly and refrigerate overnight (about 24 hours) to allow the flavors to meld thoroughly.
- Drain and Serve: After marinating, remove the cheese stacks from the marinade and drain off any excess liquid. Slice the marinated cheese into serving portions and arrange on a platter.
- Garnish and Accompany: Optionally, garnish with additional fresh herbs for color and freshness. Serve the marinated cheese with an assortment of crackers or toasted French bread for a perfect appetizer presentation.
Notes
- For a milder herb flavor, substitute green onions with chives.
- Fresh herbs are preferred over dried for more vibrant flavor.
- The sugar in the marinade can be omitted or adjusted according to personal taste preferences.
- Use block-form cream cheese for easier slicing and layering.
- If fresh roasted peppers are unavailable, fresh bell peppers can be used raw, but roasting adds depth of flavor.
- Allowing the cheese to marinate for at least 24 hours is essential for the flavors to develop fully.
