  • 2 cloves garlic, minced

  • 4 cups fresh spinach, roughly chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 cup crumbled feta cheese
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté Onion and Garlic: In a skillet over medium heat, sauté the onion in olive oil until translucent. Add garlic and cook for 1 minute.
  3. Add Spinach and Seasonings: Stir in spinach and cook until wilted. Season with salt, pepper, red pepper flakes, and oregano.
  4. Prepare Filling: Remove from heat and let cool slightly. Mix in crumbled feta.
  5. Assemble Pastries: Roll out puff pastry, cut into squares, spoon filling onto each square, fold over, and seal edges.
  6. Bake: Brush pastries with egg wash, bake for 18–22 minutes until golden brown.
  7. Serve: Let cool slightly before serving.
