Grits:

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese

Shrimp:

  • 1 pound small shrimp (peeled and deveined)
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning
  • 2 garlic cloves (minced)
  • 1 tablespoon lemon juice

Additional:

  • Chopped chives or parsley (for garnish)
  • Nonstick cooking spray or butter (for mini muffin tin)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and grease a mini muffin tin with nonstick spray or butter.
  2. In a medium saucepan, bring water and salt to a boil. Whisk in the grits, reduce heat, and simmer until thick. Stir in butter and cheeses. Spoon into muffin tin and bake.

  3. Cook the shrimp: Toss shrimp with oil, Cajun seasoning, and garlic. Sauté until cooked through, then drizzle with lemon juice.
