Description

Delicious and crispy Shrimp and Sweet Potato Fritters made with shredded sweet potato, fresh shrimp, and fragrant spices. Perfect as a flavorful appetizer or light meal, these fritters are pan-fried to golden perfection and served warm with optional lime or yogurt dipping sauce. Gluten-free options available with alternative flours.

Ingredients

Scale

Main Ingredients

  • 1 medium sweet potato (about 1 cup shredded)
  • 8 ounces raw shrimp, peeled, deveined, and finely chopped
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Batter and Cooking

  • 1/3 cup all-purpose flour
  • 1 large egg
  • 2 tablespoons milk or water
  • 1/4 cup vegetable oil for frying

Instructions

  1. Prepare Sweet Potato: Peel and grate the sweet potato using a box grater and place it in a large bowl. Pat the grated sweet potato dry with a paper towel to remove excess moisture to prevent soggy fritters.
  2. Mix Ingredients: Add the chopped shrimp, green onions, garlic, cilantro, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper to the bowl with the sweet potato. Stir gently to combine all ingredients evenly.
  3. Make Batter: In a small bowl, whisk together the flour, egg, and milk (or water) until smooth. Pour this batter into the sweet potato and shrimp mixture and mix thoroughly to ensure everything is evenly coated and combined.
  4. Heat Oil: Heat the vegetable oil in a large skillet over medium heat until hot but not smoking, suitable for frying the fritters.
  5. Cook Fritters: Scoop about 2 tablespoons of the mixture per fritter into the hot oil, flattening each slightly with the back of the spoon. Cook for 2–3 minutes on each side or until the fritters are golden brown and the shrimp is fully cooked through.
  6. Drain Excess Oil: Transfer the cooked fritters to a paper towel-lined plate to drain excess oil, keeping them crisp.
  7. Serve Warm: Serve the fritters warm, optionally garnished with a squeeze of fresh lime or accompanied by a yogurt-based dipping sauce for extra flavor.

Notes

  • Serve with a squeeze of lime or a yogurt-based dipping sauce for added brightness and creaminess.
  • For a gluten-free version, substitute all-purpose flour with almond flour or a gluten-free flour blend.
  • These fritters reheat well in the oven or air fryer, making them convenient for leftovers.
