Pasta:
- 12 oz linguine or spaghetti
Shrimp:
- 1 lb large shrimp (peeled and deveined, tails removed)
Sauce:
- 3 tablespoons olive oil
- 4 tablespoons butter
- 5 cloves garlic (minced)
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- juice of 1 lemon
- 1 teaspoon lemon zest
- 1/4 cup chopped fresh parsley
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta until just under al dente, drain.
- In a skillet, sauté garlic and red pepper flakes, cook shrimp, set aside.
- Deglaze with wine, add lemon, zest, butter, simmer.
- Combine pasta, Parmesan, parsley, place in baking dish.
