Onion Mixture:

  • 2 large yellow onions, thinly sliced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)

Liquid and Thickener:

  • 1 (10.5 oz) can French onion soup
  • 1/2 cup beef broth
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional, for thickening)

Additional:

  • 4 slices provolone or Swiss cheese (optional for serving)
  • Chopped fresh parsley for garnish

Instructions

  1. Season and Sear the Roast: Season the chuck roast with salt, pepper, and garlic powder. Sear the roast in a skillet until browned.
  2. Prepare Slow Cooker: Transfer the roast to the slow cooker and add sliced onions around it.
  3. Add Ingredients: Pour Worcestershire sauce, balsamic vinegar, French onion soup, and beef broth over the roast. Sprinkle with thyme.
  4. Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until tender.
  5. Thicken Sauce: If desired, thicken the sauce with cornstarch and water during the last 30 minutes.
  6. Serve: Before serving, top each portion with cheese to melt. Garnish with parsley.
