Chuck Roast:
- 3 pounds chuck roast
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
Onion Mixture:
- 2 large yellow onions, thinly sliced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
Liquid and Thickener:
- 1 (10.5 oz) can French onion soup
- 1/2 cup beef broth
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional, for thickening)
Additional:
- 4 slices provolone or Swiss cheese (optional for serving)
- Chopped fresh parsley for garnish
Instructions
- Season and Sear the Roast: Season the chuck roast with salt, pepper, and garlic powder. Sear the roast in a skillet until browned.
- Prepare Slow Cooker: Transfer the roast to the slow cooker and add sliced onions around it.
- Add Ingredients: Pour Worcestershire sauce, balsamic vinegar, French onion soup, and beef broth over the roast. Sprinkle with thyme.
- Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until tender.
- Thicken Sauce: If desired, thicken the sauce with cornstarch and water during the last 30 minutes.
- Serve: Before serving, top each portion with cheese to melt. Garnish with parsley.
