- Prepare the crust: Preheat the oven to 325°F. In a bowl, mix the chocolate cookie crumbs and melted butter until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8 minutes, then remove and allow to cool while you prepare the filling.
- Make the filling: In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the sour cream, vanilla extract, and a pinch of salt and mix until combined. Add the eggs one at a time, mixing on low speed just until blended to avoid overmixing.
- Add Snickers and layer batter: Gently fold in 1 cup of the chopped Snickers bars into the batter. Pour half of the batter over the cooled crust. Drizzle 1/4 cup caramel sauce and 1/4 cup hot fudge sauce over the batter, then lightly swirl together with a knife.
- Add remaining batter and bake: Pour the remaining batter on top and smooth the surface with a spatula. Bake for 55 to 65 minutes or until the edges are set and the center has a slight wobble when gently shaken.
- Cool the cheesecake: Turn off the oven, crack the door open, and let the cheesecake cool inside the oven for 1 hour. Then remove and cool completely at room temperature before refrigerating.
