Ingredients
Scale
Chocolate Mixture
- 1 1/2 cups semi-sweet chocolate chips
- 1/2 cup full-fat coconut milk
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 tbsp coconut oil (optional, for smoother texture)
Coconut and Nuts
- 1 cup shredded sweetened coconut (plus extra for coating)
- 1/2 cup finely chopped nuts (optional)
Instructions
- Melt the Chocolate and Coconut Milk: In a small saucepan over low heat, combine the coconut milk and semi-sweet chocolate chips. Stir constantly until the chocolate chips are completely melted and the mixture becomes smooth and glossy. Be careful not to overheat to avoid scorching.
- Add Flavorings and Mix-ins: Remove the saucepan from heat, then stir in vanilla extract, salt, shredded sweetened coconut, the optional finely chopped nuts if using, and coconut oil if desired. Mix thoroughly until all ingredients are evenly incorporated.
- Chill the Mixture: Transfer the mixture to a bowl and refrigerate for 1 to 2 hours, allowing it to firm up enough to scoop comfortably without sticking.
- Form the Truffles: Once chilled and firm, use a small cookie scoop or spoon to portion out the mixture and roll it between your palms into 1-inch balls. Ensure uniform size for even chilling.
- Coat with Coconut: Roll each truffle in additional shredded sweetened coconut until fully coated. This adds texture and the signature snowball look.
- Final Chill: Place the coated truffles on a parchment-lined tray and return to the refrigerator for another 15 to 20 minutes to set completely before serving.
Notes
- Store the truffles in an airtight container in the refrigerator for up to one week to maintain freshness.
- For a dairy-free version, substitute semi-sweet chocolate chips with dairy-free chocolate chips.
- Optional: Dip the truffles in melted chocolate for a firmer and glossy outer shell.
