Cookies:

Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Mix in the pumpkin purée, egg yolk, and vanilla extract until well combined.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, cinnamon, nutmeg, and ginger. Gradually add the dry ingredients to the wet, mixing just until a soft dough forms.
- Prepare rolling mixture: In a small bowl, mix the rolling sugar and cinnamon. Scoop tablespoon-sized portions of dough, roll into balls, coat with cinnamon-sugar mixture, and place on the baking sheet.
- Bake: Bake for 10 to 12 minutes until edges are set but centers are soft. Cool on the pan for 5 minutes, then transfer to a wire rack.
- Prepare icing: Whisk together powdered sugar, milk, and vanilla extract. Drizzle over cooled cookies and allow to set before serving.
