Ingredients
Scale
Peach Filling
- 8 cups fresh peaches, peeled and sliced (or 6 cups frozen peaches, thawed)
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 teaspoons lemon juice
- 1 tablespoon cornstarch
Batter and Assembly
- 1/2 cup unsalted butter (1 stick)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready when the cobbler goes in.
- Prepare Peach Mixture: In a large mixing bowl, combine the fresh or thawed peaches with 1 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir gently until all peaches are evenly coated and set aside to let the flavors meld.
- Melt Butter: Place the 1/2 cup of unsalted butter in a 9×13-inch baking dish and put it in the preheating oven until the butter is fully melted. Carefully remove from the oven once melted.
- Make Batter: In a separate medium bowl, combine the flour, 1 cup granulated sugar, baking powder, and salt. Gradually add milk while stirring to create a smooth batter with no lumps.
- Assemble Cobbler: Pour the batter evenly over the melted butter in the baking dish without stirring together.
- Add Peach Topping: Spoon the peach mixture evenly over the batter, do not stir, as the batter will rise around the peaches during baking to create the cobbler texture.
- Bake Cobbler: Bake in the preheated oven for 40 to 45 minutes until the top turns a beautiful golden brown and the cobbler is fully set.
- Cool and Serve: Remove the cobbler from the oven, allow it to cool slightly, and serve warm. This dessert pairs wonderfully with a scoop of vanilla ice cream.
Notes
- For the best flavor, use fresh ripe peaches in season, but frozen peaches also work well when thawed.
- Do not stir the batter and peach topping together; this layering helps the cobbler’s signature texture.
- You can substitute lemon juice with lime juice for a slightly different citrus note.
- If desired, add a pinch of ground ginger or cloves for additional warmth.
- The cobbler is best served warm but can be refrigerated and gently reheated.
