For the Meatballs:

  • 1 pound ground chicken
  • 1/4 cup panko breadcrumbs
  • 1 egg
  • 2 green onions, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes

For the Noodles:

  • 8 ounces rice noodles
  • 1 ripe mango, peeled and sliced
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 2 tablespoons chopped peanuts (optional)

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sriracha
  • 1 teaspoon sesame oil
  • juice of 1 lime

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the ground chicken, breadcrumbs, egg, green onions, garlic, ginger, soy sauce, sesame oil, and red pepper flakes until well combined.
  3. Roll the mixture into 1-inch meatballs and place on the prepared baking sheet. Bake for 16 to 18 minutes, or until cooked through and golden brown.
  4. While the meatballs bake, cook the rice noodles according to package instructions, drain, and rinse under cool water.
  5. In a small bowl, whisk together all sauce ingredients.
  6. In a large bowl, toss the cooked noodles with the sauce until evenly coated. Add the sliced mango, bell pepper, and cilantro, and gently toss.
  7. Serve the spicy chicken meatballs over the dressed noodles and garnish with chopped peanuts if desired.

Notes

  • For extra flavor, brush the meatballs with sauce before baking or broil for the last 2 minutes.
  • Adjust Sriracha to control heat.
  • This dish can also be served cold as a noodle salad.
