For the Meatballs:
- 1 pound ground chicken
- 1/4 cup panko breadcrumbs
- 1 egg
- 2 green onions, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated

- 1 teaspoon sesame oil
- 1/2 teaspoon crushed red pepper flakes
For the Noodles:
- 8 ounces rice noodles
- 1 ripe mango, peeled and sliced
- 1/2 red bell pepper, thinly sliced
- 1/4 cup fresh cilantro leaves
- 2 tablespoons chopped peanuts (optional)
For the Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon Sriracha
- 1 teaspoon sesame oil
- juice of 1 lime
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, mix together the ground chicken, breadcrumbs, egg, green onions, garlic, ginger, soy sauce, sesame oil, and red pepper flakes until well combined.
- Roll the mixture into 1-inch meatballs and place on the prepared baking sheet. Bake for 16 to 18 minutes, or until cooked through and golden brown.
- While the meatballs bake, cook the rice noodles according to package instructions, drain, and rinse under cool water.
- In a small bowl, whisk together all sauce ingredients.
- In a large bowl, toss the cooked noodles with the sauce until evenly coated. Add the sliced mango, bell pepper, and cilantro, and gently toss.
- Serve the spicy chicken meatballs over the dressed noodles and garnish with chopped peanuts if desired.
Notes
- For extra flavor, brush the meatballs with sauce before baking or broil for the last 2 minutes.
- Adjust Sriracha to control heat.
- This dish can also be served cold as a noodle salad.
