Ingredients
Scale
Chicken
- 4 boneless chicken breasts
- Salt and pepper to taste
Vegetables
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
Dairy and Fats
- 1 cup cream
- 1 cup cheese, shredded
- 2 tablespoons olive oil
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the smothered chicken.
- Heat Olive Oil and Season Chicken: In a skillet over medium heat, warm the olive oil. Meanwhile, season the chicken breasts evenly with salt and pepper.
- Sear Chicken: Place the chicken breasts in the hot skillet and cook for 5-7 minutes on each side until they develop a golden-brown crust. This step seals in the juices and adds flavor.
- Sauté Vegetables: Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic, fresh spinach, and sliced mushrooms. Sauté the vegetables until the spinach wilts and the mushrooms soften.
- Make Creamy Sauce and Bake: Stir the cream and half of the shredded cheese into the sautéed vegetables, mixing well to create a creamy sauce. Place the seared chicken breasts in a baking dish and pour the spinach and mushroom cream sauce over them. Sprinkle the remaining cheese on top. Bake in the preheated oven for 25-30 minutes until the chicken is thoroughly cooked and the cheese is bubbly and golden.
Notes
- Ensure chicken breasts are of even thickness for uniform cooking.
- Use a mix of mushrooms like cremini or button for added flavor.
- Substitute cream with half-and-half for a lighter option.
- Freshly grated cheese melts better and enhances texture.
- Check chicken internal temperature to reach 165°F (74°C) for safety.
