Description

Delicious and easy-to-make Spinach Feta Pinwheels featuring a flaky puff pastry filled with a savory mixture of spinach, feta, mozzarella, and green onions. Perfect as appetizers or snacks, these golden, cheesy pinwheels are baked to perfection and made in under an hour.

Ingredients

Scale

Spinach Feta Pinwheels Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 cup frozen spinach, thawed and squeezed dry
  • ½ cup feta cheese, crumbled
  • ½ cup mozzarella cheese, grated
  • 2 tablespoons green onions, chopped
  • 1 tablespoon olive oil
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it is ready for baking the pinwheels.
  2. Prepare Filling: In a mixing bowl, combine the thawed and thoroughly drained spinach with the crumbled feta, grated mozzarella, and chopped green onions. Season with salt and pepper to taste and stir until evenly mixed.
  3. Prepare Puff Pastry: Roll out the thawed puff pastry sheet on a lightly floured surface. Then brush the surface evenly with beaten egg wash to help the filling stick and achieve a golden crust.
  4. Assemble Pinwheels: Spread the spinach and cheese mixture evenly over the puff pastry. Starting from one edge, roll the pastry tightly into a log shape.
  5. Slice and Arrange: Slice the rolled pastry into pinwheel-shaped pieces about 1 to 1.5 inches thick. Place the slices flat onto a baking sheet lined with parchment paper and brush the tops with the remaining egg wash for a shiny, golden finish.
  6. Bake: Bake the pinwheels in the preheated oven for 15-20 minutes, or until they are puffed up and golden brown.
  7. Serve: Remove from the oven and allow to cool slightly before serving warm as appetizers, snacks, or party treats.

Notes

  • You can use fresh spinach instead of frozen; just sauté and drain it well before mixing.
  • Make sure to squeeze out all excess moisture from the spinach to prevent soggy puff pastry.
  • The egg wash helps create a glossy golden crust, but you can omit it for an egg-free version.
  • Pinwheels can be assembled ahead of time and refrigerated until ready to bake.
  • For a crispier bottom, place the baking sheet on the lower rack in the oven.
