Fresh Strawberry Mixture:
- 2 cups fresh strawberries, hulled and chopped
- 1 cup Greek yogurt (plain or vanilla)
- 1/4 cup honey or maple syrup
- 1/4 cup milk (dairy or non-dairy)
- 1 teaspoon vanilla extract
Additional:
- 1/2 cup granola
Instructions
- Blend the Strawberry Mixture: In a blender, combine strawberries, Greek yogurt, honey or maple syrup, milk, and vanilla extract. Blend until smooth and creamy.
- Prepare the Popsicles: Spoon a small amount of granola into the bottom of each popsicle mold. Pour the strawberry mixture over the granola, leaving space at the top. Add more granola on top if desired.
- Freeze: Tap the molds gently to remove air bubbles, insert sticks, and freeze for at least 4–6 hours or until solid.
- Serve: To release, run warm water over the molds for a few seconds before removing.
Notes
- Use frozen strawberries if fresh ones aren’t available.
- For a dairy-free version, use coconut yogurt and plant-based milk.
- These popsicles make a great on-the-go breakfast or healthy snack.
