Cake Balls:
- 1 box strawberry cake mix, plus ingredients listed on the box (usually eggs, oil, and water)
- 1 (8-ounce) package cream cheese, softened
- 1/2 teaspoon vanilla extract
Coating and Garnish:
- 2 cups white chocolate or vanilla candy melts
- 1/2 cup freeze-dried strawberries, finely crushed (optional for coating or garnish)
Instructions
- Bake the Cake: Prepare and bake the strawberry cake according to package directions; let it cool completely.
- Make the Cake Ball Mixture: Crumble the cooled cake into a mixing bowl. Add cream cheese and vanilla extract, mix until well combined and a dough-like texture forms.
- Shape the Balls: Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Chill: Refrigerate for at least 1 hour or freeze for 20 minutes until firm.
- Coat the Balls: Melt the white chocolate or candy melts, dip each chilled cake ball, allow excess to drip off, and place back on parchment. Optionally, sprinkle with crushed freeze-dried strawberries.
- Set: Let the chocolate harden at room temperature or in the refrigerator before serving.
Notes
- For a more intense strawberry flavor, add 1/4 cup strawberry jam to the cake-cream cheese mixture before rolling into balls.
- Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
