For the Popsicles:
- 2 cups fresh strawberries (hulled and halved)
- ½ cup freshly squeezed lemon juice (about 3–4 lemons)
- ½ cup water
- ¼ cup honey or maple syrup (adjust to taste)
- lemon slices and strawberry slices for garnish (optional)
Instructions
- Prepare the Mixture: In a blender, combine the strawberries, lemon juice, water, and honey. Blend until smooth.
- Adjust Sweetness: Taste and adjust sweetness if needed. Strain the mixture through a fine mesh sieve for a smoother texture.
- Fill the Molds: Pour the mixture into popsicle molds. Add thin slices of lemon or strawberry for visual appeal if desired.
- Freeze: Insert popsicle sticks and freeze for at least 4–6 hours, or until completely solid.
- Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds before removing.
Notes
- You can swap honey for maple syrup or agave to make them vegan.
- For a more tart flavor, reduce the sweetener slightly.
- These popsicles are a great way to use slightly overripe strawberries.
