Description

For the Popsicles:

  • 2 cups fresh strawberries (hulled and halved)
  • ½ cup freshly squeezed lemon juice (about 34 lemons)
  • ½ cup water
  • ¼ cup honey or maple syrup (adjust to taste)
  • lemon slices and strawberry slices for garnish (optional)

Instructions

  1. Prepare the Mixture: In a blender, combine the strawberries, lemon juice, water, and honey. Blend until smooth.
  2. Adjust Sweetness: Taste and adjust sweetness if needed. Strain the mixture through a fine mesh sieve for a smoother texture.
  3. Fill the Molds: Pour the mixture into popsicle molds. Add thin slices of lemon or strawberry for visual appeal if desired.
  4. Freeze: Insert popsicle sticks and freeze for at least 4–6 hours, or until completely solid.
  5. Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds before removing.

Notes
