Mushrooms:

  • 16 large white or cremini mushrooms (stems removed and reserved)

Filling:

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/4 cup finely chopped mushroom stems
  • 1/4 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon chopped parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: extra Parmesan for topping

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Clean and prepare mushrooms: Clean mushrooms and remove stems, chop the stems.
  3. Prepare filling: Cook garlic and chopped stems, then mix with breadcrumbs, Parmesan, cream cheese, parsley, salt, and pepper.
  4. Stuff mushrooms: Fill each mushroom cap with the mixture.
