Description

A delicious stuffed turkey breast filled with a flavorful cranberry herb stuffing, perfect for holiday dinners or a special family meal. The turkey is seasoned and roasted to juicy perfection, complemented by a moist and aromatic stuffing featuring dried cranberries, fresh herbs, and a blend of savory ingredients.

Ingredients

Scale

Turkey and Seasoning

  • 1 boneless turkey breast (about 3 to 4 pounds), butterflied
  • 1/2 teaspoon salt for seasoning turkey
  • 1/4 teaspoon black pepper for seasoning turkey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil

Stuffing

  • 2 cups day-old bread cubes
  • 1/2 cup dried cranberries
  • 1/4 cup chopped celery
  • 1/4 cup finely chopped onion
  • 2 tablespoons unsalted butter
  • 1/4 cup chicken broth
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • kitchen twine for tying

Instructions

  1. Prepare the stuffing: Melt the butter in a skillet over medium heat and sauté the onion and celery for about 4 minutes until softened. Stir in the bread cubes, dried cranberries, parsley, thyme, sage, salt, and pepper. Add the chicken broth and mix until the bread mixture is lightly moistened, then remove from heat and allow it to cool slightly.
  2. Season the turkey breast: Lay the butterflied turkey breast flat on a cutting board and season both sides evenly with garlic powder, paprika, salt, and pepper.
  3. Assemble the stuffed turkey: Spread the cranberry herb stuffing evenly over the turkey breast, leaving a small border around the edges to facilitate rolling.
  4. Roll and secure: Carefully roll the turkey breast tightly into a log, starting from one end, and secure it with kitchen twine at intervals of 1 to 2 inches to hold the shape during cooking.
  5. Prepare for roasting: Rub the outside of the turkey roll with olive oil. Place the roll seam side down in a roasting pan for even cooking.
  6. Roast the turkey: Preheat the oven to 375°F (190°C). Roast the turkey for about 60 to 75 minutes or until the internal temperature reaches 165°F (74°C) to ensure it is fully cooked.
  7. Rest and serve: Remove the turkey from the oven and let it rest for 10 to 15 minutes. This resting period allows the juices to redistribute, keeping the meat juicy. Slice and serve warm.

Notes

  • You can substitute fresh cranberries for dried if you prefer a more tart flavor in the stuffing.
  • Adding chopped pecans or walnuts to the stuffing adds extra texture and a nutty flavor.
  • Allowing the turkey to rest before slicing is crucial to keep the meat moist and flavorful.
