Instructions
- Prepare the stuffing: Melt the butter in a skillet over medium heat and sauté the onion and celery for about 4 minutes until softened. Stir in the bread cubes, dried cranberries, parsley, thyme, sage, salt, and pepper. Add the chicken broth and mix until the bread mixture is lightly moistened, then remove from heat and allow it to cool slightly.
- Season the turkey breast: Lay the butterflied turkey breast flat on a cutting board and season both sides evenly with garlic powder, paprika, salt, and pepper.
- Assemble the stuffed turkey: Spread the cranberry herb stuffing evenly over the turkey breast, leaving a small border around the edges to facilitate rolling.
- Roll and secure: Carefully roll the turkey breast tightly into a log, starting from one end, and secure it with kitchen twine at intervals of 1 to 2 inches to hold the shape during cooking.
