These sweet mango sticky rice rolls are a delightful Thai-inspired dessert or snack that combines the creamy sweetness of ripe mangoes with coconut-infused sticky rice, all wrapped in a tender rice paper wrapper. Perfect for a refreshing treat on a warm day!

Sticky Rice:
- 1 cup glutinous (sweet) rice, soaked for at least 4 hours or overnight
- ¼ teaspoon salt
Coconut Milk Mixture:
- ¾ cup full-fat coconut milk
- 1 tablespoon sugar
Additional Ingredients:
- 1–2 ripe mangoes, peeled and thinly sliced
- 6–8 rice paper wrappers
- Optional fresh mint leaves
- Optional toasted sesame seeds for garnish
Instructions
- Prepare Sticky Rice: Drain soaked rice and steam for 20–25 minutes until tender.
- Prepare Coconut Milk Mixture: Heat coconut milk with sugar and salt until sugar dissolves.
- Combine Rice and Coconut Mixture: Transfer cooked rice to a bowl, pour sweetened coconut milk over it, and stir gently. Let cool.
- Assemble Rolls: Dip rice paper in warm water, place sticky rice, mango slices, and mint on it. Roll tightly like a burrito.
- Serve: Sprinkle with sesame seeds and serve with extra coconut milk if desired.
Notes
- Keep rice paper moist but not soggy to prevent tearing.
- Enhance flavor with palm sugar or pandan extract.
- Best when eaten fresh but can be stored covered with a damp cloth for a few hours.
