Instructions
- Prepare the ingredients: Peel and dice the sweet potatoes, core and dice the apples, dice the onion, and mince the garlic to have everything ready for cooking.
- Cook the sausage: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Transfer the cooked sausage to a plate and set aside.
- Sauté onions and garlic: Add the remaining tablespoon of olive oil to the skillet. Sauté the diced onion for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
- Cook sweet potatoes: Stir in the diced sweet potatoes to the skillet. Season with salt, pepper, and ground cinnamon. Cook the sweet potatoes, stirring occasionally, for about 10-12 minutes until they become tender.
- Add apples and sausage: Return the browned sausage to the skillet and add the diced apples. Stir to combine all the ingredients and cook for an additional 5 minutes to allow the flavors to meld and the apples to soften slightly.
- Finish with sage and serve: Sprinkle chopped sage over the skillet mixture, stir, and cook for another minute. Adjust seasoning with additional salt and pepper if needed. Serve hot and enjoy!
