Chili:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground turkey or beef
- 2 medium sweet potatoes, peeled and diced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (14.5 oz) can diced tomatoes, with juices
- 1 cup tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Optional Toppings:
- ½ cup shredded cheddar cheese
- Chopped cilantro or green onions for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Sauté aromatics: In a large skillet, heat olive oil and sauté onion until softened. Add garlic and cook briefly.
- Cook meat: Add ground turkey or beef, cooking until browned.
- Add ingredients: Stir in sweet potatoes, beans, tomatoes, tomato sauce, and spices. Simmer for 10 minutes.
- Transfer and bake: Transfer the chili to a casserole dish, bake covered for 25–30 minutes until sweet potatoes are tender.
- Top and finish: Remove foil, add cheese if desired, bake uncovered until cheese melts. Rest before serving, garnish if preferred.
Notes
- This casserole can be made ahead and reheated.
- For a vegetarian version, omit the meat and add extra beans or lentils.
