Chili:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey or beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 cup tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional Toppings:

  • ½ cup shredded cheddar cheese
  • Chopped cilantro or green onions for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Sauté aromatics: In a large skillet, heat olive oil and sauté onion until softened. Add garlic and cook briefly.
  3. Cook meat: Add ground turkey or beef, cooking until browned.
  4. Add ingredients: Stir in sweet potatoes, beans, tomatoes, tomato sauce, and spices. Simmer for 10 minutes.
  5. Transfer and bake: Transfer the chili to a casserole dish, bake covered for 25–30 minutes until sweet potatoes are tender.
  6. Top and finish: Remove foil, add cheese if desired, bake uncovered until cheese melts. Rest before serving, garnish if preferred.
