Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) to prepare it for baking the casserole.
- Sauté Onions and Garlic: Heat the olive oil in a skillet over medium heat. Add the finely chopped onions and minced garlic, cooking until they become soft and fragrant, about 5-7 minutes.
- Add Chickpeas and Spices: Stir in the cooked chickpeas along with ground cumin, coriander, paprika, black pepper, cayenne pepper, and salt. Mix thoroughly and cook for an additional 3-4 minutes to combine the flavors.
- Layer in Baking Dish: Spoon the chickpea and spice mixture evenly into a baking dish. Pour the plain yogurt over the chickpea layer, spreading it gently to create an even topping.
- Add Parsley and Bake: Sprinkle the chopped fresh parsley on top of the yogurt layer. Place the dish in the preheated oven and bake for 30 minutes, allowing the flavors to meld and the yogurt to become slightly golden.
