Ingredients
Scale
Broth and Noodles
- 4 cups chicken or vegetable broth
- 2 packs instant ramen noodles (discard seasoning packets)
Taco Meat
- 1 lb ground beef or turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning (store-bought or homemade)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes (fresh or canned)
- 1 jalapeño, sliced (optional)
Toppings
- 1 avocado, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- Preparing the Broth: In a large pot, pour in the 4 cups of chicken or vegetable broth and bring it to a gentle simmer over medium heat, creating a flavorful base for the ramen.
- Cooking the Noodles: Add the instant ramen noodles to the simmering broth and cook according to package instructions, usually 3-4 minutes, until tender but still firm. Remove from heat and transfer the noodles to a bowl, optionally drizzling olive oil over them to prevent sticking.
- Preparing the Taco Meat: Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté the diced onion for 3-4 minutes until translucent, then add the minced garlic and cook for another minute. Add the ground beef or turkey, breaking it apart and cooking until browned and cooked through, about 5-7 minutes. Drain excess fat if using beef. Stir in the taco seasoning, mixing well, then add the black beans, corn, and diced tomatoes. Let this mixture simmer for 5 minutes to blend flavors. Add sliced jalapeño in this step if you want to increase the heat.
- Assembling the Taco Ramen Bowl: In serving bowls, place a portion of cooked ramen noodles at the bottom. Ladle the warm broth over the noodles to infuse them with flavor. Spoon the taco meat mixture generously over the noodles and broth.
- Adding Toppings: Top each bowl with diced avocado, a sprinkle of shredded cheese, and fresh chopped cilantro. Serve with lime wedges on the side for an added zesty finish. Season with salt and pepper to taste and enjoy your fusion meal.
Notes
- For added crunch, consider topping with sliced radishes or crispy tortilla strips.
- For extra creaminess, add a dollop of sour cream or Greek yogurt.
- Adjust heat level by adding more or less jalapeño or a splash of your favorite hot sauce.
