Instructions
- Prepare Cheese Mixture: In a bowl, combine shredded cheddar cheese, shredded Monterey Jack cheese, diced bell peppers, jalapeños, chopped red onion, and taco seasoning. Mix well to evenly distribute the flavors.
- Butter the Bread: Spread softened butter on one side of each slice of bread. This will help create a crispy, golden crust when grilled.
- Heat Skillet: Place a skillet over medium heat and allow it to warm up.
- Assemble Sandwiches on Skillet: Place two buttered bread slices butter-side down onto the heated skillet. Evenly divide the cheese and vegetable mixture over these slices.
- Top the Sandwiches: Place the remaining two slices of bread on top of the cheese mixture, butter-side up, to complete the sandwiches.
- Grill the Sandwiches: Cook each sandwich for 3 to 4 minutes on one side until the bread is golden brown. Carefully flip the sandwiches and grill the other side for another 3 to 4 minutes until the bread is golden and the cheese has melted thoroughly.
- Serve: Remove sandwiches from the skillet, slice as desired, and serve warm with optional sour cream and salsa on the side.
