For the Pie:
- 1 chocolate cookie crust (store-bought or homemade)
- 1 cup chopped pecans
- 1 cup caramel sauce (divided)
- 1 1/4 cups heavy cream
- 8 ounces semisweet or dark chocolate, chopped
For Garnish:
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Additional pecans and chocolate shavings (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Prepare the crust: Spread chopped pecans over the bottom of the chocolate cookie crust. Drizzle with 1/2 cup of caramel sauce. Bake for 8–10 minutes. Let cool.
- Make the ganache: Heat 1 cup of heavy cream in a saucepan. Pour over chopped chocolate. Stir until smooth. Pour over the crust.
- Chill: Refrigerate the pie until set, at least 4 hours or overnight.
- Whip the cream: Whip remaining heavy cream with powdered sugar and vanilla until soft peaks form. Spread on top of the pie.
- Finish: Drizzle with remaining caramel sauce and garnish with pecans and chocolate shavings.
Notes
- For a homemade crust, mix crushed chocolate cookies with melted butter, press into a pie dish, and bake for 8 minutes.
- To make slicing easier, warm the knife before cutting.
