For the cinnamon streusel:
- ½ cup brown sugar
- 1 tablespoon ground cinnamon
- ¼ cup all-purpose flour
- 3 tablespoons cold unsalted butter (cubed)
For the glaze (optional):
- ½ cup powdered sugar
- 1–2 tablespoons milk
- ¼ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan or line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy. Beat in eggs one at a time, then mix in sour cream and vanilla until smooth.
- Gradually add dry ingredients and stir just until combined.
- To make the streusel, combine brown sugar, cinnamon, and flour in a small bowl. Cut in the butter until crumbly.
- Spread half the batter into the pan, sprinkle with half of the streusel, then repeat with remaining batter and streusel.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- If using the glaze, whisk together powdered sugar, milk, and vanilla, then drizzle over the cooled cake before serving.
Notes
- For extra texture, add chopped pecans or walnuts to the streusel.
- Greek yogurt can be substituted for sour cream.
