Ingredients
Scale
Main Ingredients
- 1 lb ground beef
- 1 large onion, chopped
- 1 cup frozen mixed vegetables
- 2 cups potatoes, diced
- 1 can cream of mushroom soup
- Salt and pepper to taste
Optional Ingredients
- 1 cup shredded cheese (optional)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Brown the Beef: In a large skillet set over medium heat, cook the ground beef until it is thoroughly browned. Drain any excess fat from the skillet to keep the dish from being greasy.
- Sauté the Onion: Add the chopped onion to the browned beef and cook for 3-4 minutes until the onions become soft and translucent, adding flavor and aroma to the dish.
- Add Vegetables & Potatoes: Stir in the frozen mixed vegetables and diced potatoes, seasoning everything with salt and pepper. Then, mix in the can of cream of mushroom soup until all ingredients are evenly combined.
- Assemble & Bake: Transfer the mixture into a greased baking dish, cover it with foil, and bake in the preheated oven for 30 minutes to allow the flavors to meld and the vegetables to cook through.
- Add Cheese (Optional): If using cheese, remove the foil after 30 minutes, sprinkle shredded cheese over the top, and bake uncovered for an additional 10 minutes until the cheese is melted, bubbly, and golden brown.
- Serve: Remove the casserole from the oven and let it cool for a few minutes before serving this comforting and satisfying dish.
Notes
- You can use any mixed vegetables such as carrots, peas, and corn according to your preference.
- For a lower fat version, substitute ground beef with lean ground turkey or chicken.
- If you prefer a gluten-free version, ensure the cream of mushroom soup is gluten-free or substitute with a homemade version.
- The cheese topping is optional but adds a nice texture and flavor contrast.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
